Aïn Defla cuisine mixes Oran, Kabyle (neighboring Blidean Atlas) and colonial traditions. Chicken-and-turnip couscous is Sunday's. Chicken rechta, a celebration dish, marks ceremonies. Citrus (oranges, mandarins, lemons) is eaten fresh or as juice. Chéliff olive oil is renowned. Regional fruits (cherries, apricots, grapes) are a pride. Honey and almond pastries (baklawa, makroud) abound. Arabic coffee and mint tea pace the days. Theniet El Had cedar honey is particularly precious. Mountain goat cheeses complete the offering.
