Local gastronomy — Sétif

Sétif's cuisine is hearty, adapted to harsh high-plateau winters. Sétifienne chakhchoukha, a festive dish of crumbled flatbread and spicy lamb sauce, is the local signature. Rechta (homemade steamed pasta in white or red sauce) accompanies celebrations. Couscous with chickpeas and dried meat (gueddid) is filling. Rfissa, another crumbled-bread dish, is typical of rural families. On the sweet side, ghribia (rancid butter shortbread), baklawa and date makrout are favorites. Honey from the Babor mountains and artisan goat cheese are renowned local products. Fresh mint and sweet tea accompany every visit.
