Traditional soup with crushed wheat, meat, tomato, coriander. Essential during Ramadan, but excellent all year round.
##3. Prunal tajine
Sheep simmered slowly with prunes, honey, almonds, cinnamon. Royal Sucré-Salé of great occasions.
##4. The mhajeb
Pancakes stuffed with vegetables (tomatoes, onions, peppers), cooked on the plate. Street food par excellence, especially good in Constantine.
##5. The rechta
Fresh Algerian pasta with chicken and turnips, scented with cinnamon. Traditional dish of Algerian holidays.
##6. The Harira
Tomato velvety soup, lentils, chickpeas. Served at weddings, and at night during Ramadan.
##7. The makruts
Cheese cakes filled with dates, fried and soaked in honey. Essential with mint tea.
